Novelty Butterflies are for children's parties, too.
ingredients
makes 12
1 cup + 2 tablespoons All purpose flour
1 level teaspoon baking powder
pinch of salt
5/8 cup margarine
3/8 cup superfine sugar
1 large egg, beaten
7/8 cup Confectioner’s sugar, sifted
method
1. Preheat oven to moderately hot, 190°C (375°F).
2. Line 12 bun tins with paper cake cases.
3. Sift the flour with the baking powder and salt.
4. Cream 3/8 cup margarine with the superfine sugar until light and fluffy.
5. Add beaten egg a little at a time, beating well.
6. Using a metal spoon, fold in the flour.
7. Spoon the mixture into the cake cases.
8. Bake in the centre of the preheated oven for 15 minutes, or until golden and firm to the touch.
9. Leave buns to cool in paper cases.
10. Beat the rest of the margarine with the Confectioner’s sugar until light and very creamy.
11. Cut top off each bun. Cut each top in half to make two semicircles.
12. Pipe or spoon the icing on top of each bun.
13. Place two semi-circles on top of each bun, at an angle and with the straight sides outwards, so they look like butterfly wings.
more information
For further decoration, cut two thin pieces of angelica about 1 inch long and put in at one end of each butterfly for feelers. Three or four small silver balls down the centre will decorate the body even more.
To make baskets instead of butterflies cut a long, thin strip of angelica to go from one end of the cake to the other in a loop. Put coloured balls round sides of the cake to look like flowers peeping out.
