1 pound small round beets, washed
5 tablespoons butter
2 teaspoons caraway seeds

method
1. Place the beets in boiling salted water and cook for 30 minutes. Meanwhile heat the oven to 180°C (350°F).
2. Place the butter in an ovenproof dish and put it in the oven to heat.
3. Drain the beets and pat dry with absorbent paper. Slip off the skins and cut off roots and tops.
4. Cut beets in half. Place the beets, cut side down, in the sizzling butter.
5. Scatter the caraway seeds over and baste the beets with the butter.
6. Roast for 1 hour, basting from time to time but do not turn the beets over.
7. Serve hot and spoon the caraway butter over.
