Use small grapefruit as this is a starter dish and meant as an appetizer. For a really special occasion, use a pair of serrated kitchen scissors to cut a zigzag edge round the top of each half grapefruit before filling.
ingredients
serves 4
2 grapefruit
3/4 cup cooked chicken, diced
3 sticks celery, finely chopped
1 small can pineapple pieces, drained
3 tablespoons mayonnaise
salt and pepper
5 tablespoons mango chutney
4 candied cherries
method
1. Halve grapefruit. Remove pulp and discard pith and pips.
2. Cut flesh into segments and combine with rest of ingredients.
3. Fill grapefruit shells, decorate each with a cherry and serve chilled.
