The beef can be cut into slices a few hours in advance, covered and refrigerated. Drizzle with oil and garnish with the other ingredients just before serving.

13 oz beef eye fillet
1 tablespoon extra virgin olive oil
rocket leaves, torn
1/2 cup Parmesan, shaved
black olives, cut into slivers
method
1. Remove all the visible fat and sinew from the beef, then freeze for 1—2 hours, until firm but not solid. This makes the meat easier to slice thinly.
2. Cut paper-thin slices of beef with a large, sharp knife. Arrange on a serving platter and allow to return to room temperature.
3. Just before serving, drizzle with oil, then scatter with rocket, Parmesan and olives.
