Cauliflower in spicy tomato sauce

COOKING TIME: 25 minutes

ingredients

serves 4
1 small onion, peeled and chopped
2 cloves garlic, peeled
4 teaspoons peeled and grated root ginger
1 pound tomatoes, skinned, de-seeded and chopped
1 level teaspoon each ground cumin and ground cilantro
1/2 level teaspoon ground turmeric
1/8 level teaspoon cayenne pepper
1/ cup water
Freshly ground black pepper
medium cauliflower, about 1 1/2 pound, trimmed, with a deep cross cut in the base
2 teaspoons lemon juice

method

1. Blend the onion, garlic and ginger with the tomatoes for about 30 seconds in a food processor, to make a smooth puree.

2. Pour the puree into a saucepan, stir in the cumin, cilantro, turmeric, cayenne pepper and water, and season with black pepper. Bring to the boil, then turn down the heat and leave to simmer and thicken, uncovered, while you cook the cauliflower.

3. Steam the cauliflower for 20 minutes, until tender, then lift it into a heated serving dish.

4. Stir the lemon juice into the sauce and pour it over the cauliflower to serve.
