Do not peel and shred the celeriac until the dressing is ready. Add it immediately to the dressing and stir frequently to avoid discoloration.

Juice of 1/2 lemon
4 level tablespoons Greek yoghurt
1/2 level teaspoon mustard powder
1/4 level teaspoon superfine sugar
3/4 pound celeriac, peeled and shredded or coarsely grated
1 small lettuce, washed, drained and chilled
method
1. Put the lemon juice, yoghurt, mustard and sugar into a large bowl and whisk to combine into a smooth dressing.
2. Mix the celeriac into the dressing, stirring well to coat it.
3. Line four individual salad bowls with lettuce leaves. Spoon the celeriac into the centre and serve at once.
