This, traditional Irish dish is an attractive variation of mashed potatoes.

2/3 cup milk
10 scallions, finely chopped
1 1/2 pound potatoes, boiled and mashed
salt and freshly ground black pepper
1 tablespoon parsley, chopped
4 tablespoons butter, melted
method
2. Drain the onions, reserving the cooking liquid. Add the onions to the mashed potatoes.
3. Over a low heat, add the salt, pepper and parsley. Mix well and season, adding the reserved milk if necessary to make a stiff puree.
4. To serve, transfer to a heated serving plate and make a well in the centre.
5. Pour the butter in the well and serve.
