1. Sift whole wheat All purpose flour and salt into a large bowl. Return the husks.
2. Add ghee and rub with your fingertips until the mixture resembles fine breadcrumbs.
3. Make a well and pour in 1 cup warm water. Mix with a flat bladed knife until the dough comes together.
4. Turn onto a lightly floured surface and knead for 10 minutes. Place in a lightly oiled bowl, cover and leave for 1 hour. Knead again for 5 minutes, or until smooth.
5. Roll tablespoons of dough into thin circles. Heat a little oil in a large skillet and cook 2 chapattis at a time for 1 minute each side. Remove and drain on paper towels.
