4 cod steaks
1/2 cup butter, melted
1 cup Cheddar cheese, grated
1 tablespoon French mustard
salt
freshly ground black pepper
method
1. Heat the broiler to moderate. Remove the centre bone from each cod steak.
2. Place the cod steaks in the broiling pan and brush with half the butter. Cook for 5 minutes.
3. Turn the steaks over and brush with the rest of the butter. Cook for a further 3 minutes.
4. Combine the cheese, mustard and seasoning. Spread this mixture over the steaks and grill for 5 minutes or until the top is golden and bubbling.
