ingredients
makes one 2 lb loaf
1 lb self-rising flour
2 teaspoons salt
1 1/2 oz butter
3 large sticks celery, chopped
1 clove garlic, crushed
6 oz mature Cheddar cheese, grated
1 egg
scant 1/2 pint milk
method
1. Grease a 2 lb loaf tin.
2. Sift the flour and salt into a bowl and rub in the fat until the mixture resembles fine breadcrumbs.
3. Add the celery, garlic and cheese to the flour mixture.
4. Beat the egg and milk together, add gradually to the dry ingredients and mix to form a soft dough.
5. Knead the dough lightly and quickly on a floured surface, then shape it into an oblong.
6. Place in the loaf tin and bake in a hot oven (220°C, 425°F,) for about 55 minutes.
7. Turn out and cool on a wire rack. Serve freshly cooked, with butter.
