Fresh herbs and sweet sherry flavour two strong cheeses in a creamy paste that can serve as a starter or cheese course.
ingredients
serves: 4
5/8 cup hard goat's or sheep's cheese
5/8 cup blue cheese such as Roquefort or Gorgonzola
A small bunch of chives
6 fresh sage leaves
1 clove garlic
3 - 4 tablespoons sweet sherry
To serve:
water biscuits,
bread sticks or oatcakes
method
1. Remove any rind from the cheeses. Trim, rinse and dry the chives and sage and peel the garlic. Then put them all into a food processor or blender and process them to a thick paste.
2. Add the sherry gradually, blend until smooth, then spoon into a dish to serve. If not using immediately, cover with cling film and store in a cool place, but do not refrigerate.
3. Serve with water biscuits, bread sticks or oatcakes.
