Cheese and Spinach Puffs

ingredients

3/4 cup cooked, chopped spinach
3/4 cup cottage cheese
1 tsp grated nutmeg
2 egg whites
2 tbsp grated Parmesan cheese
salt and black pepper

method

1. Preheat the oven to 220°C (425°F) Oil six ramekin dishes.

2. Mix together the spinach and cottage cheese in a small bowl, then add the nutmeg and seasoning to taste.

3. Whisk the egg whites in a separate bowl until stiff enough to hold soft peaks. Fold them evenly into the spinach mixture using a spatula or large metal spoon, then spoon the mixture into the oiled ramekins, dividing it evenly, and smooth the tops.

4. Sprinkle with the Parmesan and place on a baking sheet. Bake for 15 - 20 minutes, or until well risen and golden brown. Serve immediately.
