Cheese Charlotte

ingredients

serves 4
1 thick slice white bread, cut into cubes
7/8 cup milk
8 slices of white bread, crusts removed
3 tablespoons butter
3 eggs, separated
1 1/2 tablespoons flour
2 cups cheddar cheese, grated
1/2 teaspoon salt
1/4 teaspoon grated nutmeg
1/2 cup thin cream

method

1. Heat the oven to moderate 180°C (350°F).

2. Put the bread cubes in a shallow dish and sprinkle over half the milk.

3. In another dish, spread out the bread slices and sprinkle them with the remaining milk.

4. Leave the cubes and slices to soak. In a large bowl, cream the butter with a wooden spoon and mix in the egg yolks, one at a time.

5. Stir in the flour. Add the soaked bread cubes, cheese, salt and nutmeg. Blend well and stir in the cream.

6. Beat the egg whites until they are stiff. Fold them into the cheese mixture.

7. Line a greased, straight-sided souffle dish or casserole with the soaked bread slices.

8. Pour the cheese mixture into the dish. Bake in the oven for 35 - 40 minutes.

Serve immediately.
