2 cups flour
1/4 teaspoon salt
1 teaspoon dry mustard
4 teaspoons baking powder
1/4 cup butter
1 cup Cheddar cheese, grated
2/3 cup milk
milk for glazing
method
1. Heat the oven to 230°C (450°F). Sift the flour, salt, mustard and baking powder into a bowl.
2. Rub in the butter until the mixture resembles breadcrumbs.
3. Stir in the cheese, then mix in enough of the milk to make a soft dough. Knead until smooth.
4. Roll out the dough to about 1/2 inch thick. Cut out 2 inch circles and place them on greased baking sheets.
5. Brush each scone with milk and bake for 12 - 15 minutes.
6. Cool on a wire rack.
