2 tablespoons oil
1 large onion, chopped
1 red pepper, deseeded and chopped
1 green pepper, deseeded and chopped
1 clove garlic, crushed
salt and pepper
2 x 15 1/2 ounce cans chick peas, drained
2 tablespoons chopped fresh herbs
a little grated nutmeg
method
1. Heat the oil in a saucepan. Add the onion, peppers and garlic, then sprinkle in seasoning to taste and cook until the vegetables are softened but not browned.
2. Stir in the chick peas and cook, covered, over a low heat until they are heated through.
3. Stir in the herbs and nutmeg to taste before serving.
