4 chicken quarters
3/8 cup butter
1 large onion, chopped
1 medium green pepper, deseeded and chopped
1 clove garlic, crushed
14 ounce can peeled tomatoes
1/4 pint chicken stock
salt and pepper
watercress to garnish
method
1. Fry the chicken for 25 to 30 minutes in 1/4 cup of the butter, or until cooked through.
2. Meanwhile, saute the onion, green pepper and garlic in the remaining butter for about 10 minutes.
3. Stir in the tomatoes, stock and seasoning. Cover and simmer for 15 minutes.
4. Spoon the sauce over the chicken on a heated serving dish.
5. Garnish with watercress and serve with rice sprinkled with chopped parsley.
