An interesting way of using cooked chicken, Chicken Luan is flavoured with curry and pineapple.
ingredients

1/2 cup butter or margarine
1 large stick celery, chopped
2 - 4 level teaspoons curry powder
1/4 cup flour
2 cans (10 ounce) cream of chicken soup
salt and pepper
3/4 pound cooked chicken, diced
1 can (8 ounce) pineapple pieces, drained
1/2 pound rice watercress to garnish
method
1. Melt butter or margarine in a pan. Add celery and curry powder and fry for 3 - 4 minutes.
2. Add flour and cook for 1 minute.
3. Stir in chicken soup, seasoning, chicken and pineapple and heat gently.
4. Meanwhile, cook rice in boiling, salted water till tender, drain and serve the chicken on it. Garnish with watercress and serve with chutney.

The flavour of this dish is mainly of curry with a sharpness provided by the pineapple. Since some curry powders are stronger than others use 2 or 3 teaspoons of powder for a more subtle flavour. If pineapple pieces are large, cut in half before adding with the chicken.
