30 large raw shrimps
1/4 cup butter
1 clove garlic, crushed
2 teaspoons soft brown sugar
2 tablespoons lemon or lime juice
2 tablespoons fresh cilantro sprigs, finely chopped
2 tablespoons fresh basil leaves, finely chopped
1 tablespoon sweet chilli sauce
method
1. Remove the heads from the shrimps, then peel, leaving the tails intact. With a sharp knife, slit each prawn down the back and devein.
2. Heat the butter in a large skillet or wok. Add the garlic, sugar, juice, cilantro, basil and sweet chilli sauce. Mix thoroughly, add the shrimps in batches, then cook over medium heat for 5 minutes, or until the shrimps turn pink and are cooked through.
3. Thread the shrimps onto bamboo skewers or strong toothpicks. Serve warm.

Prepare the shrimps several hours ahead. Cook just before serving. They are also delicious grilled. Thread onto skewers and grill for 2—3 minutes. Brush with butter mixture during cooking. Scallops or oysters can be used instead of shrimps, or alternate pieces of fish with shrimps. You can use other fresh herbs such as dill and parsley.
