Chilli shrimps with Shredded Coconut

ingredients

makes about 48
1 cup tomato sauce
3 cloves garlic, crushed
1 teaspoon ground chilli
1/4 cup lemon juice
2 teaspoons finely grated lemon rind
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon oil
4 pound raw king shrimps, peeled and deveine
1 cup shredded coconut

method

1. In a large bowl, mix the tomato sauce, garlic, chilli, lemon juice, rind, soy sauce and honey. Add the shrimps and marinate in the refrigerator for at least 2 hours. Drain. Reserve the marinade

2. Heat the oil in a large skillet. Add the shrimps and coconut and cook until the shrimps turn pink. Stir in the marinade and cook for 2 minutes, or until heated through. Stir in the coconut. Serve on a platter.
