Dried mushrooms are available from Chinese supermarkets but if they are unobtainable, use 1/4 pound button mushrooms instead.
ingredients
serves 6
15 dried mushrooms
5 cups chicken stock
1/2 cup cooked chicken meat, skinned and shredded
salt
freshly ground black pepper
sprigs of watercress
method
1. Soak the dried mushrooms in hot water for 20 minutes.
2. Bring the stock to the boil. Drain the mushrooms and add to the stock.
3. Add the chicken meat and simmer for 5 minutes.
4. Check the seasoning.
5. To serve, spoon into soup bowls and garnish with sprigs of watercress.
