Choose a large Swiss roll for this log. If making your own cake, use a 3-egg mixture. A most attractive cake to look at, it has the advantage of disguising any small cracks that sometimes appear when rolling up the cake.

3/4 cup butter
3/4 pound Confectioner’s sugar
1/2 cup cocoa powder
1 medium egg chocolate
Swiss roll
little sifted Confectioner’s sugar to decorate
method
1. Beat the butter until it is light and fluffy.
2. Sift the Confectioner’s sugar and cocoa together and beat them into the butter with the egg.
3. Spread the buttercream over the roll, marking it with a knife to give the appearance of bark. Sprinkle with sifted Confectioner’s sugar.
4. For a festive touch, decorate the serving board or dish with a sprig of holly.
