These little chocolate muffins smell so good when they are baking they will disappear in minutes.
ingredients
makes: 18 - 20
1/2 pound self rising flour
1/2 cup dark brown sugar
1 teaspoon baking powder
3 tablespoons cocoa
Salt
1 medium egg
2 teaspoons natural vanilla extract
1/2 cup sunflower oil
1 cup natural, low-fat yoghurt
4 1/2 ounce plain chocolate chips
method
1. Preheat the oven to 220°C (425°F). These muffins are smaller than traditional ones so use 18 — 20 paper cake cases, instead of muffin cases, and place them in two bun tin trays.
2. Sift the flour, dark brown sugar, baking powder, 2 tablespoons of the cocoa and a pinch of salt into a bowl; make a well in the centre.
3. Break the egg into the well; add the vanilla extract, sunflower oil and yoghurt. Beat until smooth, then mix in the chocolate chips.
4. Spoon the mixture into the paper cases and bake for 18 - 20 minutes, until well risen, firm and springy
5. Remove the muffins from the oven, sprinkle them with the remaining cocoa while they are still hot, and serve.
