You may need to adjust the amount of milk used, depending on the dryness of the bread; the more stale the bread, the more milk it will absorb.

1 pound tart apples
3 ounce whole wheat bread
1/2 cup cottage cheese
3 tbsp light muscovado sugar
scant 1 cup semi-skimmed milk
1 tsp demerara sugar
method
1. Preheat the oven to 220°C/425°F. Peel the apples, cut them into quarters and remove the cores.
2. Roughly chop the apples into even-sized pieces, about 1/2 inch across.
3. Trim the crusts from the bread, then cut into 1/2 inch dice.
4. Toss together the apples, bread, cottage cheese and muscovado sugar.
5. Stir in the milk, then tip the mixture I into a wide ovenproof dish. Sprinkle with the demerara sugar.
6. Bake the pudding for about 30 - 35 minutes, or until golden brown and bubbling. Serve hot.
