Cilantro Fruit Crumble

Cooking time: 1 hour

ingredients

serves 4 - 6
1 teaspoon butter
1 1/2 pound tart apples, peeled, cored and thinly sliced
1/2 pound fresh blackberries, washed
2 tablespoons brown sugar
1 teaspoon ground cinnamon

for the topping

1 cup flour
1/2 cup sugar
1/2 cup butter, diced
2 teaspoons ground cilantro

method

1. Heat the oven to 180°C (350°F). Grease a 2 US quart baking dish with the butter. Put the apples and blackberries in the baking dish and sprinkle with the brown sugar and cinnamon.

2. To make the crumble topping, put the flour and sugar in a medium-sized mixing bowl, Cut in the butter, then, using your fingertips, rub it into the flour and sugar until the mixture resembles breadcrumbs. Mix in the cilantro.

3. Sprinkle the crumble on top of the fruit and bake in the oven for 45 minutes.
