These pretty little pastry whirls, scented with cinnamon, are sure to be coffee-time favourites.
ingredients
makes 24 small rolls
For the Dough
1 2/3 cups strong white flour
1/2 tsp salt
2 tbsp sugar
1 tsp easy-blend dried yeast
3 tbsp oil
1 egg
1/2 cup warm milk
1/2 cup warm water
For the Filling
2 tablespoons Butter, softened
2 tablespoons soft dark brown sugar
1/2 - 1 tsp ground cinnamon
1 tbsp raisins or Seedless white raisins
method
1. Sift the flour into a large mixing bowl, the add the salt and sugar and sprinkle over the yeast. Mix together the oil, egg, milk and water and add the liquid to the flour. Mix to a dough, then knead until smooth. Leave the dough to rise until it has doubled in size and then knock it back again.
2. Roll out the dough into a large rectangle and cut in half vertically. Spread over the soft butter, reserving 1 tbsp for brushing. Mix the sugar and cinnamon and sprinkle over the top. Dot with the raisins. Roll each piece of dough into a long Swiss roll shape, to enclose the filling.
3. cut each piece into 1 inch. slices and arrange on a baking sheet. Brush with butter. Leave to rise for 30 minutes.
4. Preheat the oven to 200°C/400"F. Bake the rolls for 20 minutes. Leave to cool on a wire rack.
