4 medium-sized potatoes, chopped
2 pound cod fillets, skinned and chopped
1/2 cup butter
1 tablespoon fresh parsley, chopped
pinch of cayenne pepper
salt
freshly ground black pepper
1 egg, beaten
flour for coating
method
1. Put the potatoes and cod into a saucepan, just cover with water and bring to the boil. Cover and simmer for 15 - 20 minutes or until the potatoes are soft but not mushy.
2. Drain the fish and potatoes and return them to the saucepan. Heat gently for about 2 minutes to dry the fish and potatoes. Remove from the heat.
3. Add 2 tablespoons of the butter, the parsley, cayenne and seasoning to taste and mix well, mashing the potatoes and flaking the fish to combine. Add the egg.
4. With floured hands, shape the mixture into small balls.
5. Melt the remaining butter in a frying-pan. Add the cod balls and fry for about 4 minutes or until crisp and brown all over.
6. Serve very hot. Pass a parsley or mornay sauce separately if desired.
