Serve Coffee gateau at a special tea party.
ingredients

1 cup + 2 tablespoons All purpose flour
1 1/2 lb level teaspoons baking powder
3/4 cup margarine
1/2 cup superfine sugar
2 large eggs
1 level dessertspoon, plus
1 level teaspoon instant coffee powder
7/8 cup Confectioner’s sugar
2 tablespoons raspberry, strawberry or plum spread
method
1. Preheat oven to moderately hot, 190°C (375°F).
2. Grease two 7 inch round sandwich tins. Line with greaseproof paper.
3. Sift the flour and baking powder.
4. Cream 1/2 cup margarine with the superfine sugar.
5. Add the eggs, one at a time, beating well after each addition.
6. Fold in the flour using a metal spoon.
7. Mix the dessertspoon of coffee with a dessertspoon of boiling water. Beat into the cake mixture.
8. Divide the mixture between the prepared cake pans. Smooth the tops.
9. Bake in the centre of the preheated oven for 20 - 25 minutes or until golden and firm.
10. Turn out cakes to cool on a wire rack.
11. Sift the Confectioner’s sugar.
12. Cream rest of margarine with Confectioner’s sugar and the teaspoon of coffee until light and fluffy.
13. When the cakes are cool, sandwich them together with the spread.
14. Spread a little icing on top and round the sides of the cake and make a stippled pattern with a fork.
15. Put the rest of the icing in a piping bag with a medium-sized star nozzle. Pipe lattice pattern across the top of the cake, and stars round edge and base.
