A sophisticated, simple fruit salad for any time of year.
ingredients

3 Ogen or Galia melons
1 cup green seedless grapes
2 kiwi fruit
1 star fruit
1 green-skinned eating apple
1 lime
3/4 cup sparkling grape juice
method
1. Cut the melons in half and scoop out the seeds. Keeping the shells intact, scoop out the fruit with a melon bailer, or scoop it out with a spoon and cut into bite-size cubes. Set aside the melon shells.
2. Remove any stems from the grapa and, if they are large, cut them in half. Peel and chop the kiwi fruit. Thinly slice the star fruit. Core and I thinly slice the apple and place the slices in a bowl, with the melon, grapes, kiwi fruit and star fruit.
3. Thinly pare the rind from the lira and cut it into fine strips. Blanch the strips in boiling water for 30 seconds, then drain them and rinse in cold water. Squeeze the juice from the lira and toss it into the fruit. Mix gently.
4. Spoon the prepared fruit into the melon shells and chill in the fridge until required. Just before serving, spoon the sparkling grape juice over the fruit and scatter it with the blanched lime rind.
