Cracked Wheat and Fennel

This salad incorporates both sweet and savoury flavours. It can be served either as a side-dish or as a starter with warm pitta bread.

ingredients

serves 4
3/4 cup cracked wheat
1 large fennel bulb, finely chopped
1/4 pound green beans, chopped and blanched
1 small orange
1 garlic clove, crushed
2 tbsp sunflower oil
1 tbsp white wine vinegar
salt and black pepper
1/2 red or orange pepper, seeded and finely chopped, to garnish

method

1. Place the wheat in a bowl and cover with boiling water. Leave for about 10-15 minutes. Drain well and squeeze out any excess water.

2. While still slightly warm, stir in the chopped fennel and green beans. Finely grate the orange rind into a bowl. Peel and segment the orange and I stir into the salad.

3. Add the crushed garlic to the orange rind, then add the sunflower oil, white wine vinegar, and seasoning to taste, and mix thoroughly. Pour the dressing over the salad, mix well. Chill the salad for 1-2 hours.

4. Serve the salad sprinkled with the chopped red or orange pepper.
