redcurrant string, to decorate
1 egg white, lightly beaten, to decorate
1 tablespoon superfine sugar, to decorate crushed ice
3 tbsp cranberry juice
1 1/2 tbsp brandy
3 tbsp pink grapefruit juice
3 tbsp Marsala
method
1. Lightly brush the redcurrants with the egg white.
2. Shake superfine sugar over the redcurrants, to cover them in a light frosting. Set them aside to dry.
3. Place the cranberry juice with the brandy and grapefruit juice in a cocktail shaker full of crushed ice and shake for 20 seconds to mix thoroughly.
4. Strain the cocktail mixture into a well-chilled glass.
5. Tilt the glass slightly before slowly pouring the Marsala down the side of the glass into the drink.
6. Serve the cocktail decorated with the frosted redcurrant string.
