1 cup salt codfish
1 cup milk
2 tablespoons butter
2 tablespoons flour
1/8 teaspoon pepper
1 egg
method
1. Separate the fish into very small pieces and leave in cold water for 3 hours, changing the water 3 times.
2. Heat milk in double boiler. Add well-drained codfish and cook for 10 minutes.
3. Blend butter, flour and pepper and stir into milk. Cook 10 minutes, stirring constantly until thickened.
4. Remove from heat, add beaten egg, stir well and serve at once.
5. If the sauce is cooked after the egg is added, it is likely to curdle. The egg may be omitted.
