This sauce is particularly good with pan-fried steak or chicken.
ingredients
serves 6
2 tbsp oil
2 shallots or 1 onion, peeled and finely diced
6 ounce button or cup mushrooms, sliced
5 ounce mixed wild mushrooms, sliced
2 garlic cloves, peeled and crushed
1/4 pint white wine
7/8 cup creme fraiche
salt and pepper
2 tsp chopped thyme
method
1. Heat the oil in a pan, add the shallots and cook gently for 10 minutes. Add the mushrooms and garlic and cook over a high heat for 4-5 minutes until tender and all the moisture has been driven off.
2. Pour in the wine, bring to the boil and let bubble until reduced by half.
3. Add the creme fraiche, 3 1/2 fluid ounce water and seasoning. Bring to the boil and bubble for 5 minutes or until the liquid is slightly thickened and syrupy. Add the chopped thyme, adjust the seasoning and serve immediately.
