Crisp fried Onion Rings

ingredients

4 red onions, peeled
2 tsp sea salt
oil, to deep-fry
All purpose flour, to coat
white pepper
lemon wedges, to serve

method

1. Slice the onions into thin rings and separate the rings out, placing them in a large bowl. Sprinkle with the salt and leave to stand for 20 minutes.

2. Heat a 2 inch depth of oil in a deep heavy pan until it registers 180°C on a thermometer. Season the flour with white pepper.

3. Cook the onion rings in batches. Dip into the seasoned flour to coat lightly, then deep-fry in the hot oil for 2 - 3 minutes until crisp and golden. Drain on kitchen paper and keep warm in a low oven while cooking the rest.

4. Season with a little extra salt and pepper if liked. Serve as soon as possible, with the lemon wedges.
