1 tablespoon oil
2 onions, sliced
2 cloves garlic, crushed
1 tablespoon curry powder
1 1/2 pound minced lamb
1/2 teaspoon turmeric
pinch each of ground ginger, paprika and cayenne pepper
salt and pepper
1/2 pint natural yogurt
method
1. Heat the oil in a flameproof casserole and saute the onions and garlic in it until softened.
2. Stir in the curry powder and cook, stirring, for 2 to 3 minutes. Add the lamb and cook, again stirring, until evenly browned.
3. Add the spices and seasoning and stir in the yogurt, then cover the casserole and simmer for about 1 hour, until cooked.
4. Serve with rice and a selection of traditional curry side dishes - tomato and onion slices, salted peanuts, chutney and banana slices sprinkled with lemon juice.
