Attractive Curry meal is a blend of curried rice, chicken and fruit in a pastry case.
ingredients
serves 4
shortcrust pastry made with 2 1/4 cups flour (see Below)
6 ounce long-grain rice
1 large orange
1/2 small green pepper
1 small banana lemon juice
1 level teaspoon curry paste
3/4 pound leftover cooked chicken breast, cut into large pieces
3 tablespoons raisins
cucumber slices and lettuce leaves to garnish
method
1. Preheat oven to moderately hot, 200°C (400°F).
2. Roll out the pastry and use to line the base and sides of a Swiss roll tin.
3. Prick pastry with a fork.
4. Bake blind in centre of preheated oven for 20 - 25 minutes.
5. Meanwhile, put the rice in a pan with water to cover.
6. Cook for 20 minutes, or until all the water is absorbed. Rinse in cold water, then drain well.
7. While rice is cooking, cut unpeeled orange into slices.
8. Chop the pepper flesh.
9. Peel and slice banana and toss it in lemon juice.
10. When the rice is ready, mix in the curry paste, making sure it is well blended. Mix in pepper and banana.
11. Put rice mixture in the cooked pastry case.
12. Arrange chicken pieces and raisins on the rice mixture.
13. Garnish with lettuce, orange and cucumber as shown in the picture.
14. If liked serve with coconut.

SHORTCRUST PASTRY
Makes 8 ounce pastry
Use for sweet and savoury dishes
- pies, flans, tartlets, pasties and turnovers.
2 1/4 cups All purpose flour
1 level teaspoon salt
1/4 cup lard (shortening)
1/4 cup butter or margarine
cold water to mix
1. Sift flour and salt into a bowl.
2. Cut fats into flour with a knife.
3. Rub fats into flour with fingertips until mixture resembles fine breadcrumbs.
4. Add water little by little, stirring with a knife until mixture forms large lumps.
5. Bring mixture together with fingertips and knead lightly into a ball.
6. Roll out briskly on a floured board. Avoid stretching the pastry.
