1 1/2 pound tart apples, peeled, cored and sliced
1 teaspoon lemon juice
3 tablespoons brown sugar
3 tablespoons water
4 thick slices brown bread
1 tablespoon ground cinnamon
5 tablespoons butter
2/3 cup thick cream
2 ounce semi-sweet chocolate squares, grated
method
1. Put the apples in a heavy-bottomed pan with the lemon juice, sugar and water. Cover and cook over a low heat for 25 minutes or until tender.
2. Meanwhile, cut the crusts from the bread and reduce the bread to crumbs. Melt the butter in a pan over low heat. When foam subsides add the crumbs and fry until brown and crisp. Sprinkle the brown sugar and cinnamon over the crumbs. Remove from heat and mix well.
3. In a glass serving dish layer the cooked fruit and crumbs ending with a layer of crumbs. Set aside to cool.
4. Cover the dish and chill for at least 1 hour. Pour the cream over the dessert and sprinkle the chocolate on top just before serving.
