1 teaspoon butter
2 cups self-raising flour
1/2 teaspoon baking powder
1 teaspoon salt
2/3 cup soft brown sugar
1/2 pound dates, pitted and finely chopped
3/4 cup walnuts, chopped
1 egg, beaten
2/3 cup milk
method
1. Heat the oven to moderate 180°C (350°F). With the butter lightly grease a 1 pound loaf pan. Sift the flour, baking powder and salt into a medium-sized mixing bowl. Mix in the sugar, dates and walnuts.
2. Beat the egg with the milk, then stir into the flour mixture. Mix well until the batter is smooth. Turn the batter into the prepared loaf tin.
3. Bake for 1 - 1 1/2 hours, or until a skewer inserted into the centre of the loaf comes out clean.
4. Remove the loaf from the oven. Allow it to cool in the tin for 5 minutes. Run a knife round the edge of the tin and reverse the loaf on to a wire cake rack.
5. Leave until the loaf is completely cold before serving.
