1 1/4 cups All purpose flour
2 teaspoons Baking soda
salt
1/2 teaspoon cinnamon
1 tablespoon butter
3/4 cup dates, stoned and chopped
1 tablespoon corn syrup or honey
1/2 cup milk
for the poaching syrup
2 1/2 cups water
1 cup sugar
1 inch piece of ginger root, peeled
method
1. To make the poaching syrup, bring the water to the boil in a saucepan with a lid. Add the sugar and stir to dissolve. Add the ginger.
2. Sift the flour, soda, salt and cinnamon for the batter. Add the butter and rub it into the dry ingredients. Stir in the chopped dates, corn syrup or honey and milk to make a smooth batter.
3. Adjust the heat so that the poaching syrup is slowly boiling. Working quickly, drop spoonfuls of the batter into the syrup.
4. Cover the pan and cook for 25 minutes. Do not disturb the pan during this time and do not lift the lid.
5. To serve, discard the piece of ginger and spoon into individual serving dishes with some of the syrup.
Serve hot.
