1. Mix the seasoned flour with the lemon rind in a plastic bag. Tip in the fish in batches, then close the bag and shake until all are well coated.
2. Heat the oil to 185°C (360°F), or until a small cube of stale bread dropped into the oil turns golden in 50 seconds.
3. Fry the fish in small batches for 2 - 3 minutes or until light' brown.
4 .Drain on absorbent paper. Serve hot, garnished with parsley.
