method
1. Mix the sherry, vinegar, Worcestershire sauce, mustard and seasoning to taste in a small bowl.
2. Make a few neat cuts in the chicken flesh and place in a shallow dish.
3. Pour the sherry mixture on top and leave the chicken to marinate for at least 1 hour, turning from time to time in the mixture.
4. Cook the chicken under a moderate grill or on a barbecue over medium coals for 10 to 15 minutes on each side, depending upon size, basting alternately with the sherry mixture and oil.
5. Serve hot, with salad ingredients and pickle
