2 tablespoons fresh white breadcrumbs
2 tablespoons grated onion
pinch of cayenne pepper
1 tablespoon dry mustard
4 mackerel, filleted
1/4 cup All purpose flour
4 tablespoons butter
1 medium onion, sliced into rings
method
1. To make the stuffing, combine the breadcrumbs, grated onion, cayenne and half the mustard.
2. Spread each mackerel fillet with a little of this stuffing and roll up. Secure each roll with a wooden cocktail stick.
3. Mix the flour with the remaining mustard and use to coat the rolls.
4. Melt the butter in a large skillet, add the fish rolls and fry over moderate heat for about 12 minutes, turning occasionally, until cooked through.
5. Remove the cocktail sticks from the mackerel rolls and serve hot, topped with the onion rings.
