There are two versions of this party piece. One has oysters wrapped in bacon before being cooked, while the other has prunes instead of oysters. The prunes are sometimes cooked in wine, their stuffed with mango chutney or an almond. The addition of hot Tabasco sauce turns Angels of Horseback into little devils.

8 bacon rashers
12 pitted prunes
12 oysters, on the shell or bottled
2 tablespoons Worcestershire sauce
Tabasco sauce, to taste
method
1. Soak 24 wooden skewers in water for 30 minutes. Trim the rind from the bacon and cut each rasher into three pieces. Wrap a portion of bacon around each prune and secure with a skewer.
2. Remove the oysters from their shells, or drain from the bottling liquid. Sprinkle lightly with Worcestershire sauce and ground black pepper, to taste. Wrap each oyster in bacon, securing with a skewer as before.
3. Cook under a preheated grill or lightly oil the outer edge of a preheated barbecue flatplate. Cook the savouries, turning occasionally, until the bacon is crisp. Serve warm, sprinkled with a dash of Tabasco sauce.
