Cooking time: total 1 hour 10 minutes, plus cooling time
ingredients
makes 16 squares
1/2 cup margarine
1 1/4 pound dried apricots, soaked overnight
1/4 cup fine sugar
1 3/4 cups All purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 medium-sized eggs, lightly beaten
1 1/4 cups brown sugar
1/2 teaspoon vanilla extract
3/4 cup walnuts, chopped
1/2 cup confectioners sugar
method
1. Heat the oven to 180°C (350°F). Grease a shallow 8 inch square baking pan.
2. Cream the margarine and fine sugar together until light and fluffy. Rub half the flour into the mixture. Press into the baking pan. Bake for 25 minutes or until the pastry is lightly browned.
3. Drain the apricots and chop them into small dice. Meanwhile, sift the remaining flour with the baking powder and salt. Mix the eggs and the brown sugar together. Gradually add the egg and sugar mixture to the flour. Stir in the vanilla, chopped apricots and walnuts and mix well. Spread this over the cooked pastry and bake for 30 minutes.
4. Remove the tin (pan) and allow to cool. Cut into 16 squares and roll them in the confectioners sugar.
