1/2 pound dried split peas
approximately 3 pints water
2 pig's trotters
1 marrow bone
salt and pepper
1/2 pound potatoes, peeled and sliced
3 leeks, sliced
3 sticks celery, sliced
3 onions, sliced chopped parsley
4 frankfurter sausages
method
1. Wash the peas and soak them in half the water overnight.
2. Simmer trotters and marrow bone in remaining water for 1 hour.
3. Add the peas plus the soaking water. Cook until soft, about 1 hour. Season well.
4. Add the potatoes, leeks, celery and onions and cook for a further 40 minutes.
5. Remove the marrow bone and trotters, scrape out the meat and return this to the soup.
6. If necessary thin the soup with a little stock. Adjust seasoning.
7. Stir in parsley and sliced frankfurters, allow to heat and serve.

If pig's trotters are not available, try using a ham bone or 3 or 4 slices of fatty bacon, finely chopped. Add with the soaked peas. The bone would be removed but not the bacon.
