Chipolata sausages come in cans if you cannot find fresh. Why not try some of the herb or spicy flavoured sausages? They would go well with the tartness of the apple.
ingredients
serves 2
1/2 pound cooked chipolata sausages
1/4 cup butter
2 thick rounds of bread
1 large eating apple
4 medium eggs
salt and pepper
2 tablespoons light cream or milk
method
1. Slice sausages and put into a saucepan with 2 tablespoons Butter.
2. Spread remaining butter over the bread. Toast under a heated grill and keep hot.
3. Peel, core and chop the apple, add to sausages and heat through.
4. Beat eggs well with seasoning and cream or milk.
5. Pour into the pan and stir until just scrambled.
6. Pile eggs on to toast and serve hot with baked beans and green salad.
