Eggs Florentine

ingredients

serves 4
1 pound spinach, stalks removed
4 tomatoes, thinly sliced
1/4 pound cooked ham, cut into strips
1/4 cup butter
pinch of grated nutmeg
salt
freshly ground black pepper
8 soft-boiled eggs
1 cup Cheddar cheese, grated
2 tablespoons grated Parmesan cheese

method

1. Heat the oven to 120°C (250°F). Cook the spinach in a covered pan without any water for about 7 minutes. Turn it and break it up every now and then with a wooden spoon. Drain well in a colander, pressing out all excess liquid, then chop the spinach.

2. Scatter the tomato slices and ham strips over the bottom of a greased ovenproof serving dish.

3. Melt the butter in a saucepan. Add the spinach, nutmeg and seasoning and mix well. Spread the spinach over the tomatoes and ham. Make 8 indentations in the spinach with the back of a spoon, then put the dish in the oven to heat through.

4. Heat the broiler to high. Place an egg in each indentation in the spinach. Sprinkle over the Cheddar cheese followed by the Parmesan. Broil until the cheese has melted and is golden and bubbling.
