Essen Eggs

ingredients

serves 4 - 6
1/4 cup olive oil
1 medium-sized onion, finely chopped
2 medium-sized potatoes, diced
2 ounce cooked ham, diced
1 small green (bell) pepper, white pith removed, seeded and finely chopped
1/2 pound canned tomatoes, drained and chopped
8 frankfurters, cut into 1/2 inch slices
1/4 teaspoon dried basil
6 eggs
1 teaspoon salt
1/2 teaspoon black pepper

method

1. Heat the oven to 230°C (450°F).

2. In a large frying-pan, heat the oil over moderate heat. Add the onion and potatoes and cook, stirring occasionally, for 5 minutes.

3. Add the ham, green pepper, tomatoes, frankfurters and basil. Cook, stirring occasionally, for 15 minutes.

4. Turn the mixture into a medium-sized oven-proof dish. Smooth the top with a knife. Break the eggs on top of the mixture and sprinkle them with the salt and pepper.

5. Place the dish in the upper part of the oven and bake for 8 - 10 minutes, or until the whites of the eggs are set.

Serve at once.

I think the potatos should be partically cooked or they taste hard and raw.
