6 medium potatoes, peeled and shaped into even-sized ovals
1 slice lemon
1/4 cup butter
1 onion, finely chopped
salt and pepper
1/4 cup Parmesan cheese, grated
1/4 cup Cheddar cheese, grated
parsley sprigs to garnish
method
1. Slice the potatoes thinly into vertical slices, leaving them attached at the base.
2. Soak the potatoes in cold water with a slice of lemon added, until they are all sliced. Melt the butter in a skillet and fry the onion until soft.
3. Drain the potatoes and arrange them, cut side upwards, in an ovenproof dish.
4. Spoon the onion and butter over and season to taste. Cook at the top of a moderately hot oven (190°C, 375°F) for 30 minutes, basting occasionally.
5. Mix the cheeses and sprinkle over the potatoes. Cook for a further 20 to 30 minutes until crisp and golden.
Serve immediately.
