Fava Beans in parsley sauce

COOKING TIME: 8 minutes

ingredients

serves 4
3 pound fresh Fava Beans in their pods, to give 1 pound shelled beans
Freshly ground black pepper
4 level tablespoons Greek yoghurt
2 level tablespoons chopped fresh parsley
1 level teaspoon paprika

method

1. Bring 1 3/4 pints of unsalted water to the boil in a large saucepan and cook the beans in it, covered, for 8 minutes, or until tender.

2. Drain the beans well, season with pepper and stir in the yoghurt, parsley and paprika. Turn into a warmed dish and serve.

When Fava Beans are out of season, you can use 1 pound of frozen Fava Beans.
