Feta Spread

ingredients

makes about 1 cup
6 ounce crumbled feta
4 ounce ricotta
3 tablespoons olive oil
1/2 ounce fresh mint, chopped
crusty bread, for serving.

method

1. Combine the feta, ricotta and olive oil in a bowl and mash with a fork until well combined. The mixture should still contain a few small lumps of cheese.

2. Add the mint and some cracked black pepper, to taste. Store in an airtight container in the refrigerator for up to 5 days. Toast the crusty bread and serve with the spread.

These could be topped with slices of roasted tomato or pepper (capsicum).
